Scrumptious Egg Breakfast Skillet

I’m kind of in new territory blogging about food I name the recipe? How the heck do I do that?! Haha maybe I’ll come up with a name while typing this up!

I think breakfast may be my favorite meal of the day to cook for. It can be so quick yet elegant and fancy. Simple yet sophisticated. All while being nourishing and delicious!

This morning I made my new favorite breakfast that I just might eat every day this week. For realz. It’s that good. AND. It’s 21 Day Fix approved!

First I chopped and sautéed about 4 mini sweet peppers in my cast iron skillet.

Once those were about 1/2 to 3/4 the way done I added half of a can of diced tomatoes with garlic and onion (drained) and let it sauté/drain for a few minutes.

Next I cracked 2 eggs on top of the veggies and put the whole skillet in the oven for about 10 minutes.

I also put a whole grain English muffin in the oven to toast for a few minute while the eggs were cooking.

Once the eggs were cooked I plated it over the English muffin and topped with a little Himalayan salt, some black pepper, and some goat cheese.

Y’all. It was so good. Like SO GOOD! I felt like I was at some fancy restaurant!

For those doing 21 Day Fix, 21 Day Fix Extreme, or The Master’s Hammer &  Chisel this ends up being 1 red, 1 1/2 green, and 1 yellow. Just make sure your diced tomatoes don’t contain sugar or they would be considered a purple instead of a green!
